KUNINGAN – Janji pemerintah mengentaskan stunting lewat program Makan Bergizi Gratis (MBG) kini justru berubah jadi ancaman. Alih-alih menyehatkan, makanan gratis itu menyimpan racun berbahaya.
Hasil uji laboratorium yang terungkap menunjukkan kadar nitrit dalam menu MBG di Kabupaten Bandung Barat nyaris empat kali lipat dari ambang batas aman. Pada hidangan melon tercatat 3,91 miligram per liter, sedangkan lotek 3,54 miligram per liter. Padahal standar Environmental Protection Agency (EPA) hanya memperbolehkan 1 miligram per liter.Dampak dari kandungan ini langsung terlihat.
Sebanyak 1.315 siswa di Bandung Barat terkapar dengan gejala keracunan massal, mulai mual, muntah, pusing, hingga sesak napas. Kasus itu menambah deret panjang korban MBG sejak Januari 2025. Secara nasional, lebih dari 5.600 siswa sekolah sudah jatuh sakit akibat menu serupa.Ahli gizi menyebut ada dua penyebab utama. Pertama, penggunaan pengawet berlebih untuk menjaga makanan tetap tahan hingga berjam-jam sebelum dikonsumsi. Kedua, pemasakan pada suhu tinggi yang mengubah nitrit menjadi nitrosamin, senyawa pemicu kanker lambung dan pankreas.
Distribusi makanan yang tidak higienis serta penggunaan garam berlebihan semakin mempercepat terbentuknya racun.Namun, di balik persoalan teknis dapur, tercium aroma lain yaitu korupsi anggaran. Dari 71 triliun alokasi MBG, baru 13 triliun yang benar-benar terserap. Sisanya, sekitar 58 triliun, raib tanpa jejak jelas. Kritik publik terhadap Satuan Pelayanan Pemenuhan Gizi (SPPG) kerap dimentahkan, seolah ada kekuatan yang sengaja melindungi proyek ini.
Menu MBG sendiri justru banyak mengandalkan pangan ultra-processed seperti nugget dan sosis, yang dikenal tinggi nitrit. “Ini bukan lagi sekedar kelalaian. Sejak awal, desain programnya lebih condong ke proyek politik ketimbang kepentingan gizi anak,” kata Uha Juhana, Ketua LSM Frontal, sabtu (4/10/2025).
